How flat is flat? Filling in subfloor dips

Is there a rule of thumb among professionals for deciding which minor dips in a subfloor need to be filled in with patching or self-leveling compound?

I am planning to do my kitchen floor with 16x16 ceramic on top of CBU. The 3/4" ply subfloor is solidly supported but it's an old house, and some joists are a little higher than others. I've been using feeler gauges under a straight edge to mark low spots on the subfloor. Using a 1/8" gauge, there are some largish low spots; using a 1/4" gauge, obviously, the low spots are much smaller. Basically I'm trying to figure out how flat it needs to be.

So, in the opinion of pros, how flat is flat?

The standard is no more than 1/4" out of plane in any 10 foot direction, and no more than 1/16" in any 1 foot direction. If you are doing stone, it's 1/8" in 10 feet.

These are tough standards.
