Yeah, Davy, even the manufacturers (Quikrete or Sakrete or maybe both) actually recommend that method for fence posts. Like you, I still mix my fence post concrete before placing.

We use the foam when we set fence posts, it is way faster, easier on the body and not much more money. As for my wall, I was following the instructions on the bag, I bought stuff that said no mixing not regular old concrete and I figure that they have done some extensive testing so I feel comfortable doing it this way. And it is a post if it fails, it's way less work/money to replace it than a shower. There is no manufacture that is saying "yeah you can do a shower pan this way" If there was, I would still mix mud cause I would be nervous that something would go wrong with the install and don't want to buy and rebuild anyone's bathroom, if they even let me. I am not saying this method doesn't work or that people shouldn't do/or try it, If I were considering doing this I would do a mock up in my shop before ever doing this on a job.

...As well you should. For me..I've done dozens of them and, with the proper water mix, I know it works....
