Subfloor and wall framing question

I noticed during demo work that my builder installed the first subfloor layer, then framed the shower walls and set the top subfloor layer (Trimming it around the framed walls). I am ripping these walls out to install new ones (In a different location). I have removed the top subfloor layer and will be putting down some thicker plywood, so my floor is "Wide open" until the new walls are framed. I was thinking it would be easier and faster to lay all the top subfloor (5/8" plywood) and then frame the shower walls on top of it. I would imagine the plywood floor has more "strength" if it stays intact.

This will be a Kerdi shower with a Kerdi pan, Any input on this?

the only problem with doing it that way, is that you can't use a standard stud. You'd have to shorten each stud the thickness of the plywood. If it's a short wall wouldn't be a big problem, but if you have lots of walls.......
