Granite and Thinset question

Hey All, I have question about what thinset to use. I am about to lay a kitchen counter top and short backsplash with a 12x12x3/8 granite tile.

What thinset should I use for this project?

Also, can I use this same thinset from the granite project for a ceramic or porcelain backsplash? Any advice for an all around good thinset for both these applications would be appreciated. Thanks Guys.
