I'd describe it as super light gray-ish tone.
Pretty much the same as the thinset on my test board (Custom Flex-bond White)
A little lighter and less saturated than Laticrete #88 Silver Shadow, which is just about the lightest gray tone I've seen in person.

It would really blend well with my tiles (hoping the low contrast would mask any deviations in my grout lines

Doubled Up on Color Paks

Last time I used Permacolor Select I had to double up on the color paks to get a close color match to the sample stick.

The original grout was special order. The grout dried way too light so I had to special order more grout and extra color paks. The process ended up being expensive and time consuming.

That was two years ago and the grout has held up well even though I doubled the amount of tint to reach a color match.

I'm debating between the Perma Color and Perma Color Select. I really don't see any benefit to using the color paks and it's a hassle if you need to mix small quantities.

It is more of a hassle to mix up small quantities but the advantage is that you don't have 20lbs of grout to store or throwaway. With Select, you can keep the rest of the bag and mix with another color pack.

I used to use GroutOnce with my Permacolor grout.
My tile store pitched me Permacolor Select. I've got a tile shower coming up to try it on. Hopefully it's awesome

Adding more water

In post 123 Sharon from Laticrete said you can add a small amount of extra water to PS to achieve a workable consistency. Would this be extra clear water, or extra colored water?

That is a good question, you would think if you added color or regular water in a small amount it wouldn’t have much affect either way.

mixing it from the start and adding a little more of the colored water sounds like what she is saying

Mix the full amount of water with the color packets that the Data Sheet recommends … but only use the smaller amount of water when mixing initially …use the colored water to adjust as needed. If you use fresh clear water the grout color can drift.
