First time tiler

Let me give you the specifics:
117sf kitchen
2x8 joists 16" oc
3/4" subfloor
3/4" T&G floorboards
12x12 tile w 1/4" spacers

I've checked the deflection and I'm good for ceramic tile
I'll be screwing and gluing 3/8 plywood.

Then using versabond to lay in the ditra

Many people say stay away from HD custom blend unmodified
Thinset.... Opinions??

Many people are correct. Go across the street to Lowes and get some Megabond if you want a decent un-modifed thinset to set the tiles on top of the Ditra. Versabond will be OK for setting the Ditra on the plywood subfloor, and will be OK to set tile on top of Ditra, but you will lose Schluter's warranty.

I wouldn't glue the 3/8" plywood. It's not necessary. However, if I did glue it, I'd use a carpenter's glue, like Titebond 2, not construction adhesive. Anything you gun will potentially give you lines of glue and gaps between the lines that are worse than not gluing at all.
