1. I suppose you could do that.

2. Depends upon what you plan to use for waterproofing the shower walls. If it's a sheet-type direct bonded waterproofing membrane installed with thinset mortar, you'd not need to fill and tape the seams in your CBU at all.

My opinion; worth price charged.
