Grout or Mortar for Saltillo tile?

Hi All, I bought Mexican Saltillo Tile, 1000 sf, raw, unsealed to do my floors at my house. DIY. Not sure what to buy for grout? I have seen a tile setter use Mortar in the past. Should I use mortar or grout? Any advice will be appreciated. Thank you, Judy

Welcome, Judy.

DIY 1,000 square feet of Saltillo? Que Mujer!

I've always set Saltillo over a mortar bed over concrete SOG and used sand and Portland cement mixed 3:1 for the grout. And we generally colored the grout with some chocolate cement coloring, but that's an aesthetic consideration.

My opinion; worth price charged.

The floors in my house are a concrete slab.
Are you saying we use the same product to set the tiles as we do to grout it?

We set the tiles using thinset mortar. Frequently a lot of thinset mortar. But your tiles appear to be uncommonly flat. They really come from the Saltillo area of Mexico?

The larger grout manufacturers make grout specific to the larger grout joints typical of saltillo installations. Here is one:
