Porcelain 1"x1" over existing porcelain with Flexbond

I've got a project which involves tiling over some older existing porcelain tile. The new tiles are Dal 1"x1" porcelain. I am thinking about using Custom Flexbond pokey since it says it can be used to bond porcelain tiles. Is Flexbond a good choice for this application or is there something better?

Also, this is an exterior public entrance to a building that gets used every day except Sunday. I'm thinking about tiling Sunday morning then covering the new tile with plywood on Monday morning so people could walk on it. Will the plywood significantly slow the thinset drying time? I can't really heat the space and the temps here are high 65 low 45. Is this enough time for the thinset to harden enough for foot traffic? Should I consider using speedset?

Sorry for all the disjointed questions, but I just type as I think.

I think you may have a problem with the drying time. Impervious to impervious will at least double the drying time assuming the temperature is around 70. Even taking the tile out and going to concrete for a standard thinset would be pushing it.
