Mesh back on Kerdi ceiling

About to set my shower ceiling tile in my new master shower. Ceiling is Kerdi (steam shower). i'm using small 2x4 porcelain mesh back tile for ceiling. Question is:
1. What is the best thinset technique for bonding this tile to my Kerdi ceiling?
2. Should i burn thinset into back of each little tile?

Concerned about getting full coverage.

One more question before i begin tiling, is there any danger of starting and stopping my wall install for a day? Does the thinset need to be continuous on the walls for any reason.

2'x4'? Solid tile or mosaic?
1. 100% coverage and a non sag mortar is how I like ceilings done. Laticrete tri-lite and ardex x77 would be my top choice. Backbutter the tiles if they are solid tile, if they are mosaics I comb out thinset on a scrap piece of backboard with a small v notch then set the tile on that. Then pull it up and install on the ceiling. Doing this will transfer thinset onto the mosaic similar to backbuttering but with less mess.
2. See above
You can stop and start as you please

It will probably be fine, I just prefer to use a non sag thinset. I havent used kerabond t so I can't speak to how well it will preform on the ceiling.
