Akemi repair advice

Hi all,
I've got a small repair to do in a granite backsplash and I'm uncomfortable with it. I believe that the material is called "Impala Pearl". It's a grey and brown mottled stone with "pearls" of copper and blue. Lots of depth and so I'm uncertain how to layer knife-grade polyester to blend well.
Also, as I don't use this stuff normally, I'm a bit unfamiliar about how to get it up to a matching gloss?
Damn builders told me to tile the entire cooktop and now their microwave/hood won't fit. The spot is up in the corner, under the cabinet uppers and out of view. Removing the entire piece and replacing it would compromise the float behind it.
