I would probably use a v-notched trowel, and then flatten the ridges with the back side so they don't show through. Use white thinset. Before the thinset sets up, you have to moisten the paper facing with a sponge and peel it off carefully, and then adjust any irregularities in the joints.
Can a willing installer make them work? Yes, but it is a challenge nonetheless. Take your time.
