Right up my alley Jenni.

Did a lot of research on reducing sound transmission when I was framing out my basement. Adding insulation will help a little but don't expect wonderous results. As you suspect adding a 2nd layer of drywall would provide far more benefit. If there's any way to add a 2nd layer then, by all means, go for it.

Even so, I'd still add the insulation. Since you are doing Kerdi the moisture stops there and you won't have any moisture issues within the wall. Play it safe though and use unfaced insulation, or use faced but slice up the facing.
