Hi Christopher, I've installed it before and I usually make the joint 1/8 to 3/16. Use a sanded grout and seal it afterwards also. You will probably find that a non sag thinset will still let the tiles slide, especially thick and heavy stone. I would get some wedges to help hold them up, start at the bottom and work your way up.
