There should be instructions with that water control valve telling you the proper installation position. In my experience it does generally want to have the plaster guard flush with the finished wall surface. But you want to check the instructions for your particular unit.

Not sure just how your simulation would work. Your plywood, at a max of 23/32nds" thick is gonna be substantially thinner than just your wallboard and tile thickness of 7/8ths" without any bonding mortar.

My opinion; worth price charged.
