There is a standard shear test, and it damages the tile and/or backerboard. It isn't done in the field, but is used to qualify a product (thinset) for use.

The contractor should not have been able to pull a piece of tile off the substrate with only his hands, if the thinset had enough time to cure. So, it looks like we still need more information here. What thinset was used, how was it mixed and applied, how long did it cure, what kind of tile, how did it look when he pulled it off, did the thinset stick to the backerboard or tile or both, etc?
