Anthony, the tile industry standard, unless the manufacturer recommends otherwise, is to allow a 24 hour cure of the bonding mortar before installing grout. That's for a cementitious grout. Manufacturers of other types of grout may have longer cure requirements.
And that's considering optimum environmental conditions in the work area.
It would certainly be a good idea for you to find out the answers to the questions about the bonding mortar and grout.
