I have a few brass divider strips between some wall tiles in my shower. I used standard terrazzo dividers and they worked out fine.

My experience from the good ole days as a GC says your greatest risk is going to be at the joints between the panels, particularly if the concrete topping is not reinforced.

I have three showers. All have the same Kohler valve and Speakman shower head. One shower has pex between the valve and head. I don't find any perceptible difference in the water volume or pressure.
