Its my preference to waterproof and tile at least a few inches outside the wet area. In dry areas you can tile anything you'd like. Its more of a design choice.

We just finished a shower with 1/3 offset. I drew both patterns and let the customer decide. They both come out looking like barber pole stripes.

I'd use my ditra trowel whatever size that is. A very large vee notch or holding a 1/4" square notch at a sharp angle will work.
