The 254 will grab better and I would trust Ryan's advice on the 257. I've never tried it. 253 is perfectly fine from a spec sheet perspective but you'll have more issues with the mat wanting to curl...

I'm in a northern climate and sometimes overnight isn't enough. What I do is check the floor before I enter by poking down in the grout joints and trying to get a read on how hard the thinset is....
