That cabinet grade plywood is very likely put together with water soluable glue. Keep that plywood away from wet mortar. Use a plywood with exterior (waterproof) glue.

I use high dollar mortar to mount to Kerdi, then leave it undisturbed for several days before picking it up. Yes, it will be stiff like cardboard.
