Do not discard epoxy grout if compatible with your tile .

If you could get 5 rows in 5' it should look more balanced for the chevron pattern.

In a chevron pattern you have parallel lines and 45degrees lines -- angle on cuts 45 or 135 --
The very minor deviation from 45 degree gets you in trouble.

Unless parallel lines are not required...
