I have used furniture stain to darken pavers. Followed by either a water based or solvent base sealer. There is no need to apply other sealers, and I would be worried about adhesion on my top coat...

take the travertine up higher with diamonds

grab a extra piece of the travertine sand half of it as the installer did, get diamond disk sand 200, 400, 800 then polish see if it matches if it doesn't re sand up till 1800 then polish. ...

go to a beauty supply, buy 30% hydrogen peroxide, boost with 10% ammonia. Glove up the peroxide will burn you be carefully with it.

Just wondering how did you apply the sealer, did you buff it off or let it dry? Did you seal the whole backsplash or just the 2x2 test area? The dullness may be excessive sealer residue, try paint...

food safe sealer

Hi janet
I know akemi makes a fda approved food safe sealer. I havent tried it however i use alot of their other products, and are happy with them. may want to check it out
