Some stores will cut them for you...others, perhaps not. I have cut thresholds using a "snap cutter" many, many times and dressed it with a stone.

Aside that, you really don't want to use morter...

There are a LOT of good cutters out there ranging from a couple of hundred bucks to twice that (and more) A few years ago, I went with the Ishi cutter. Reasonable and works well. HD sells them...

Versabond is just fine. The "LFT" version is really only appropriate if you are using a quite large tile. Otherwise, the standard Versabond is just fine.....
