The premade benches are fine, but framing one isn't too tough. Usually it's cheaper and takes about the same amount of time if you're having to modify the size or shape.

Theoretically yes, but it needs to be a full spread trowel kerdifix application and I will tell you from experience that it turns into a mess pretty easily.

It would be a good idea to go ahead and address that issue now. A bow in the wall will cause issues as you tile that area.
