I just recently put in 26 dollar marble mosaics ,and go figure, they weren't perfect either.

The first time I ran into it I tore out all the mud, sisterd the joists to get rhem to the height i wanted and then t&g ply....

Less room for error. One piece that is 1/16 bigger is your grout line. So you either have no grout or a not straight Line.
Either way you end up with an installation that is less than eye pleasing....
