On the second, I see what you’re doing with the smaller tiles in the corners...it looks like a fairly large tile “folded” into the corner....

Those flat stones don’t change their appearance as much as rounded stones do when they’re grouted...but they do change. It’s probably a great idea to make a sample board and grout it for the client...

I strongly second Dan’s suggestion to remove the drywall and rework the studs. It will likely be far easier, faster, and give better results than attempting to extensively patch.
