We just finished a shower with 1/3 offset. I drew both patterns and let the customer decide. They both come out looking like barber pole stripes.

The problem with the electro plated is they are really smooth. This raises the odds they can back out over time and become loose. The hot dipped provide far more friction.

I'd use my ditra trowel whatever size that is. A very large vee notch or holding a 1/4" square notch at a sharp angle will work.
