Hello All-

Does anyone have a secret way to speed grout installs on walls vs. it falling all over?

You might try using two floats.

With your grouting float take the grout out of the bucket and load as much as you're comfortable with on the second float, then hold the second float against the tile at the lines you're grouting and push the grout off of it into the line with your grouting float. It's basically like tuckpointing brickmortar. Not everybody likes doing it this way but I'm about a third faster with this method.
