Setting 12 by 24 3/8 thick tile and going to use the metal tile edging like the Schluter Jolly on the wall where tile stops. My choices would be 3/8 or 1/2 thick edging. Any recommendation which size would look best.

For tile that size you're probably going to need a 1/2" square notch trowel so I would probably get the 1/2" schluter profile because there will be a good amount of thinset under the tile.

Schluter's recommendation is to size the profile to the thickness of the tile. It should not be thicker, and no more than 1/16" thinner. Yes, you can use a thicker one than the tile, but it can be tricky getting things to line up. At the edge, the thing that grabs the profile and locks it in place is the thinset that comes up through the cutouts, which also holds the tile at the edge, too. On a floor, you need some thinset underneath it, but it could be essentially tight to the tile. On a wall, you don't need any thinset underneath the profile and can place it flush on the wall, then spread thinset, then set the tile. If you press down on the tile too far and the profile is higher than the tile, it can be a bear to pull things up to then reset it and get the profile and tile aligned. If your profile is the design depth for the tile, you can't over press it in so it sinks below the top of the profile.

If you choose a metal one (and even if it's plastic), make sure to wipe any excess thinset off fairly quickly or it will stick, and maybe etch or stain the profile if it's left on the outside too long.
