I am new to the forum, so please let me off easy if I am "in the wrong place"!
Could someone give me guidance on how replacing a window in a shower should be done? It is nearly a full size window on the front of an 80-year old stucco house so getting rid of it isn't really an option.

You will want to remove the stucco around the window to reveal the casing.Now go inside the window casing and look for the screws holding the window in,and remove them.Now cut any caulk around the inside or ouside of the casing,Now try to use a rubber mallet or your palm and tap the window to the outside with someone outside to keep it from falling.

Welcome to the Forum! I would think a high quality vinyl replacement window would be the state of the art replacement but I don't know how that would fit in with the rest of the "look" of the house. They have come a long way since their inception. Some neighbors did their entire house with Anderson vinyl replacement windows and they look great.

That's a good point, before replacing the window you will want to waterproof the bottom and sides where it will sit with a roll on waterproofing like Redgard(Home Depot) or Hydroban.You can get a little smaller window but not bigger, obviously.You will just need to build out the bucking.
