Did you pour a slc as a base for the ditra heat? It is recomended to have the floor flat before installing ditra.As far as thinset goes If you can get Latticrete products I would use their trilite....

be aware that some of these newfangled one part grouts tend to set very quickly and even faster on the face of the tiles. Try a very small area as a test before doing a larger area.
