My wife and I just bought a local pizzeria. :yo: It was doing well, the previous owner was just tired of running it. Its been quite a ride so far, but I'll let you know in another year. My wife and kids are primarily running it, I help out when I can and manage all the books. Hopefully, the restaurant helps us through the slow times in the construction area.
So, if any of you happen to come through our little town, take some time to try some of the best pizza in the state!

If the Pizza biz don't work out..
you kin' mebee' bake 'Specialty Tile' in them ovens. :---)
Come think of it..... that tile prolly' would taste better than some Pizza I've had recently.

Good luck with your new endeavor, Juan! I've been known to cover some distance for a good pizza.
I hope the pizza business is one of those recession-proof businesses. I'm sure there's some data on that somewhere.
Is there such thing as Utah-style pizza?

That's great Juan. I hope things go well. At least you already have the advantage of knowing how tough small business can be. The restaurant trade is a tough business though. You don't get to knock off when you want to :) .
One suggestion...develop a signature house pizza. Make it something good but unusual. (It probably shouldn't include pieces of tile. :lol1: )

I was just thinking of making the same point as Neesie. A signature pizza, or some special thing that customers can make into a habit will carry you a long way. Personally, I really like the flavor of semolina pizza dough over the rice-flour dough which has become much more commonplace in the past couple decades. Crust is as important as the toppings! The toppings which my wife and I often choose for ourselves are chicken breast, carmelized onions, roasted garlic and a white sauce instead of a traditional red sauce. I used to frequent a "Brazillian-style" pizza place which didn't use sauce on their pies at all,... and it was great!
I miss serial films at "pizza parlors". I grew up with weekly adventures to Red Vest Pizza where new Flash Gordon (original series), new Little Rascals (original series) and a classic black-and-white movie (Duck Soup was always my favorite) were featured every week.

Yep. A house special is the way to go (of course the key is actually making it special).
My favorite pizza in Evansville, Indiana is Turoni's (http://www.turonis.com/) . They had a fantastic house pizza that kept me coming back (and they brewed their own beer with lesser success). Oh, and their Iron Man pizza was an outstanding meatless choice for Lent. Actually, I ate that one year round.
Despite my affinity for Chicago style deep dish, Turoni's pizza is one of the few things I miss about the Evansville area.

You know Shaughn, that's a great idea. Lots of pizza joints run the TV, Why not have a family movie night and rent a neat DVD to show? You could also have a date night. It would be later on Fri or Sat nights so no kiddies would be around and you could show classic horror or romance flicks. Casablanca night...throw in a free soda or Tshirt advertising your place of course, for anyone who shows up in a tux or trench coat. Show creature features and bring people back in with the sequels...Creature from the Black Lagoon 1,2,3.

Jaun, congrats on your new venture.
I was a food delivery guy for a lot of years, so I have seen and tasted A LOT of different pizza. Often the reward for the good delivery service was a free lunch where ever I was delivering.
I had a route that went through Storm Lake, Ia. A place down there called Honey Kissed Pizza has by far IMO the best pizza I have tasted.
It was a thin crust, all natural ingredients, smoked - roasted roma tomatoes made up the red sauce, real mozzarella cheese, and quality spicy Italian sausage then comes their signature - after it comes out of the oven they brush the top of the pie with honey.
I was apprehensive at first of the taste, Pizza and Honey shouldn't go together but man it worked - for me anyway !!
Invent a signature pie and they will sell or maybe the old owners already have one.
I may be doing a motorcycle trip to Kalispell, MT, maybe I could talk the guys into making a trip to your pie shop (14 guys on crotch rockets from Minnesota).
Where abouts in Utah are you?

Oh Dan! You just reminded me of something else. House Brewed Root Beer!!!!! It's an easy operation, and relatively cheap once you've got the set-up. Even if it was just "Root Beer Night Thursdays" you could generate some "buzz". I hear the folks in Utah drinks lots of that non-caffeinated Sarsaparilla? :cheers:

Like I said, my wife and kids work the store and I collect the money. :lol1: Actually I think it will be a great family business. My two teenage daughters can earn some money and both my wife and I love to cook. We have done some catering and love to try new recipes. Although when I'm making pizzas, I try to grab the trowel out of my back pocket or throw a level on top - don't want no pepperoni lippage. :D The restaurant will also be a good advertising tool. I'm planning on tearing out the laminate countertops and installing some 3cm stone. I also get to try some new Opticolor on some missing grout on the floor.
We will be moving our DVD business over there and hopefully the two will help each other. The DVD store will then be remodeled to be my tile and stone showroom.
I believe pizza is fairly recession proof. Even a poor college student or teenager will splurge on pizza and movie. Its a cheap date.

Our signature pizza is a pesto sauce, grilled chicken, fresh spinach, kalamata olives, artichoke hearts, roasted red peppers, and fresh Parmesan. We also have some awesome smoothies. In the future we are hoping to open a breakfast menu with breakfast pizzas and breakfast calzones.

You've already got the skills. If you've got the space, building a wood-fired pizza oven might also be a real "hoot"! Wow, you've got me wanting to throw away my kneepads for a peel, already!

That is one small town :). I live in SLC and had to google it to see where it is. You probably get a lot of tourism traffic heading towards the national and state parks! I'll Keep you in mind next time I visit Capital Reef!

Thanks Randy. I just tried Nevoles down in Sandy. Maybe it was just the combination but I wasn't impressed. We would be glad to have you visit. Let us know a date and time and we'll have it ready for you when you drive into town.
Shaugnn, lets do it. I'm ready to franchise. Well, not yet, but its a thought. A wood fired stone oven eh? Hmmm. You gots me thinking. I just broke a slab of Amarello Ornamental and not sure what to do with the pieces - a 1000 business card holders or an outdoor oven. :idea: There's a local dude that does artisan bread in a wood oven and some of the locals wait in line an hour to get his bread. Its expensive but way good.
