I'm an RN, not a tile dude. I've just installed unsealed Saltillo in a 10' x 16' covered porch in Florida. I'd like to maintain a natural flat finish with minimal stain. What is the best seal that may bring out the natural color without adding a lot of shine? I understand I need to do this seal before I grout...right?

Yes, at least a coat or two to avoid grout problems, then grout and clean and more coats to seal the grout, here's a link to a site, but most water based sealers will fit the bill of sealing without adding too much sheen...http://www.aldonchem.com/

You can also use a product called Repel by Hillayard. It wont add any shine and seals exterior saltillo better than anything else I've used for a matte finish. It will be about 25 bucks a gallon and you could easily use up 2 gallons on that size floor.
It also seems to last about 3 years.
